Apple Pecan Muffins

Welcome to my continuing quest to get my husband to eat breakfast.  It started with the breakfast wrap and has moved on to these muffins.  They are relatively healthy (I mean, apples are good for you!! ) :) and I can actually get him to take them to work and eat them for breakfast.  They are really yummy and I wanted to share the recipe.

APPLE PECAN MUFFINS

 Ingredients:

1-1/2 cups all-purpose flour

1/2 cup sugar

1-3/4 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

2 egg whites

1/2 cup skim milk

3 tablespoons olive oil

3 tablespoons applesauce

1 medium tart apple, peeled and grated

Topping:

1/4 cup packed brown sugar

1 tablespoon all-purpose flour

2 tablespoons cold butter or margarine

1/4 cup finely chopped pecans

In a bowl, combine the first five ingredients. In another bowl, combine the egg, milk, oil and applesauce. Stir into dry ingredients just until moistened. Fold in apple. Fill greased or paper-lined muffing cups two-thirds full.

For topping, combine brown sugar and flour. Cut in butter until crumbly. Stir in pecans.  Sprinkle over muffins.

Bake at 400 degrees for 18-22 minutes or until a toothpick comes out clean. Cool for five minutes before removing from pan to a wire rack.  Makes 12 muffins.

The Husband-Proof Breakfast

Getting my husband to eat breakfast is nearly impossible.  He runs out the door every morning and drinks about 10 pots of coffee at work.  By the time lunch rolls around, he is starving.  This makes me crazy and I’ve been trying to get him to eat breakfast.  I gave up on getting him to eat before he left for work so I moved on to the ‘Take Breakfast to Work’ plan.  It has been rather successful.  I’ll basically make him something and throw it in his car window as he backs out of the driveway.  One thing that he really likes is a breakfast wrap.  It’s pretty simple and relatively healthy.

Breakfast Wrap

  1. Wheat and Garlic Wrap
  2. Ranch Dressing
  3. Ham
  4. Swiss Cheese
  5. Hard Boiled Egg

I put a little bit of Ranch dressing on the wrap and throw on some cheese and ham.  Slice the hard boiled egg and lay the slices on top.  Fold the bottom of the wrap and roll it up.  I then roll it in a sheet of foil.  It prevents any mess as my husband drives to work and it makes the wrap more aerodynamic so it’s easier for me to fling it into his car window as he drives away!

The Best Sugar Cookies!!!

Sugar Cookie Recipe

I don’t even like sugar cookies but I decided to make these for my husband and his friends one evening. It was like tossing a cow into a pen of velociraptors. I was fortunately able to snag one before the carnage began. They were pretty outstanding and relatively easy to make. They are also different than the typical chocolate chip or oatmeal cookie. I think that these would be a pretty big hit anywhere.  I think that one of my side effects of pregnancy has become the incessant need to bake.  I really think that I could do it all day.  I’m sure that this is just the first of many recipies!!
